Bilingual site - Hide category for 1 of the sites?

Apologies if it's been asked before, I've looked everywhere and can't find it.

 

I'm installing the French version of the website at the moment. I'd like to offer some products to French customers which aren't available to UK customers (e.g. Books in French), is there any way to "hide" a category for the other language?

Also, is there a way to enter 2 payment addresses? If they pay in Euro, the cheque goes to an address in France, if in ? to an address in the UK
