Admin Sort Items in Invoice and Packing Slip.

I'm looking for a modification for the admin invoice.php and packing slip.php pages which will sort all items ordered by Category then alphabetically or just by Item name alphabetically if that's easier.

 

Is there any way to add a "total number of items ordered" under the quantity "<td>"
