Customer's email not showing on order

Finally got the site to live last night and the store owners email me today that they aready received a order, but the person asked a question and they can't find a way to respond to it. Didn't want to let them into Admin, but had to so they could write to her. I actually have 3 email questions:


1. the only way I could get the order emails to go to their email in the first place was to set the Send Extra Order Emails to their direct email address. I have done the redirect thing and set up admin with it all, but nothing would show up in testing until I put that in there. Doesn't seem right!


2. In Admin, the FROM email and text does not show up on the emails going to the customers. I have it set to show their name, and the site email address, but it shows their direct email address instead. Doesn't the FROM area really mean anything?????


3. and how do I get the Customer's email to show so they can respond to the questions that show with the orders?
