Determining the sort order for product attributes

I have products with several different attributes (i.e. size, color, etc). I want the default value to be Large and Gray but whenever I add other options it bumps the default down so other options are now the default selection.

 

I have played with it for hours on end trying different methods, naming conventions, just about everything I can think of.

 

Is there any way to dictate the sort order for this? Any help will be greatly appreciated.
