how do I tell oscommerce that my package is a larger package?
Simple: you can't. The UPSXML contribution has a feature that you can define the size of a box if the product is pre-packaged (doesn't need to be packaged any further: "ready-to-ship") and get quotes for this (possibly oversized) package. At the moment, if you want to make use of this feature it will bring so much work and it still needs to have a bug fixed, that I wouldn't advice you to go for that.

An explanation of how osC calculates shipping weight and number of boxes can be found in the knowledge base.
