Display All Products in a Category?

After clicking the category in the left bar, I would like to be able to display something like this:

 

CATEGORIES

Choose a subcategory:

(normal sub category links and pictures)

Or browse all products in the category:

(all products listed alphabetically, or even just a link to a page that will display all products)

 

 

I know that products are displayed on the category page if they dont have a subcategory, but then the page does not have the subcategories links to chose from, or the new products. I think for this to work, products kind of need to be in two subcategories: the one theyre in normally, as well as an 'All' category. Can this be done? Am I on the wrong track? Does anyone have anything similar working on their sites?
