Adding county to address

I have just started on OsCommerce and so far I have managed to find things that I need to edit but think I wanted to do was add in the County when people fill in their details - can this be done?

 

On mine at the moment they have to complete street address, city and post code - if i can add county where would i have to go to modify the file?
