Ok, i know that i can create the same produt in what categories i need, but, my idea is to only have um product and it can appear in more than one category. For instance if i want to control the stock, creating two products could be a problem...

The first option, Link, would be what you want; one product linked to several categories so you only have to maintain one.

You really should read through the knowledge base, you will find that it is time well spent as it explains how most everything in the admin section works. The Knowledge Base is a wonderful thing.
