Editing items in Specials and New Products boxes

I am setting up an OS Commerce cart and was wanted to know:

 

How do you add or delete products from the new products or specials list?

 

Preferably it would be a way some one like me who does not know php could do this. (It would be great, for example, if there was a contribution that added a field or two in the administration panel of OS Commerce in the products/edit that would be a simple check box, 'include in new products' or 'include in specials', along with fields that allow one to change the price etc)

 

For example since I have a new cart, and have just added all my products, they are thus ALL listed as new. I have found lots of forum entries on topics related to this, but just can't seem to find a way to control what shows up in these boxes. I did find a way to delete the placing zero in the list! (ie '1' instead of '01')

 

Also in a recent entry I see that bullets have been added to the listed entries. I would love to know how to do that, or added lines between the entries - for this I am sorta comfortable with messing around a bit with the code in a .php file.
