Dont want Prices or billing sent

I'm still getting OSCommerce set up, but I figured I'd ask now to save me time later :D :

 

I want to use OSCommerce as a Quoting system - people select the items they want and the "order" is emailed to our sales department. They then look at the request and provide a price quote (this is because the products are highly custom and depending on the work requested, the price will change.)

 

How do I set up OSCommerce so that there are no prices listed, and when they "place" the order, no bill is sent to a payment agency?
