meta tags or header tags contribution

Which of these is the one to use?

 

Or do you use both, forgive my novice questions but I am just that. A novice!

I'm not familar with one called meta tags (couldn't find it in contributions either). But Header Tags is considerded by most to be the most important to have if you are going to have just one.

Header Tags is the better of the two, IMO. However, many people run them both from what I read and that is probably a good idea. header Tags doesn't add tags for categories.
