This is my first ever mod and seeing how I don't know what I am doing, it is pretty amazing that it works.
I wanted a Coming Soon page similar to products_new.php that would display all of the upcoming releases in my shop. I needed it to query the database to get the products_date_available and use it to list any products that have an availability date which is greater than today. As long as you use the Date Available field when creating product, this page will work for you.

In the file products_coming_soon.php change the two ocurrences of FILENAME_PRODUCTS_NEW to FILENAME_PRODUCTS_COMING_SOON
